Every forum needs a hot sauce thread. I found one on Hot Peppers, but it hasn't been posted to in a year, so I am starting a new one.
I am almost 60 years old and I love hot sauce, so I can't believe that I just discovered Sriracha Asian hot sauce, this week. I had seen and heard of it many times, but never actually tried it. I was a bit scared of it because everyone says it is so hot and because the rooster on the label looks very aggressive. It is really great stuff. I think it is so good because it is a little sweet. We also got some of the Sriracha Chili Garlic sauce, but I haven't tried it, yet.
My other favorites are Crystal for a traditional low-end sauce, and Louisiana if I can't get Crystal. Moving upscale a little, Frank's is wonderful. It is great for wing sauce, like they say, but it is also an excellent general purpose hot sauce.
Moving on up the scale some more, original Tabasco is really the standard. Some people say it is not hot at all, but it burns me about as much as most of the vaunted habanero sauces. I love it on barbecue, steak, and fried catfish (not at the same time).
My favorite habanero sauce is Yucatan Sunshine. I prefer good pepper flavor to blazing heat. I also enjoy Marie Sharp's and, occasionally, Melinda's. I really like the Melinda's pure ground habanero pepper, but I haven't seen any of it in several years. I especially get a kick out of the label: "Warning - THIS IS NOT A JOKE. ...", which goes on to describe just how hot it really is. Also, for low-end habanero sauce, I like the green El Yucateco.
