    Fermented vs. Pasteurized

    I am trying to educate myself more about tobacco production. Does anyone know of a good website or article that compares and contrasts the fermentation of tobacco vs pasteurizing it.

    So far it sounds like to ferment tobacco you bundle it and allow it to sit and almost let dry up and rot a little (Green leaf to brown leaf) vs. pasteruization where the tobacco is washed and heated at a consistent temperature to kill the bacteria. If this is the case then why is snus tobacco dark brown vs. green?

    Snus tobacco is air dried (to brown color), and steam pasteurized. I'n not exactly sure what order everything is done, grinding, flavoring, pasteurizing, etc., but it somehow makes the transition from light brown to dark brown.

      AirWoodstock (the guy from Snustopia) just got back from Sweden.

      Here's a link (pic is a little too big to paste here)
      of the raw tobacco in the factory @ Swedish Match.
      as you can see it's not green.

      Fermentation is a bacterial process.
      vs
      The maillard reaction (which happens during pasteurization) is a chemical process.

              Are there any kinds that are pasteurized instead of fermented?
